Add vibrant colours and fresh flavours to your plate with this blush red grapefruit salad, with prawn, avocado and tamarind. It’s a lovely lunch or starter

3 tbsp sesame oil1 tsp tamarind1 small garlic clove, crushed3cm piece of ginger, peeled and finely grated3 tsp fish sauce1-2 limes, juiced2 ripe avocados, stoned, peeled and thinly sliced2 red grapefruits, peeled, pith removed, sliced into rounds8 radishes, thinly sliced150g cooked king prawns, peeled2 tbsp sesame seeds½ small bunch of coriander, leaves picked and torn
STEP 1Combine the sesame oil, tamarind, garlic, ginger, fish sauce and lime juice. Taste and add more fish sauce if needed, then season to taste.STEP 2Arrange the avocado, grapefruit rounds, radishes and prawns on a serving platter. Drizzle over the dressing and scatter with the sesame seeds and coriander.
