Put a glut of summer fruits to delicious use in our glorious fool recipe. Fuss-free desserts like this are ideal for a dinner party or casual gathering

400g mixed summer fruits (such as raspberries, blueberries, halved strawberries and redcurrants), any stems removed2 tbsp icing sugar½ lemon, zested and juiced2 tbsp elderflower cordial300ml double cream½ tsp vanilla extract (optional)200g Greek yogurt
STEP 1Tip all the fruit into a bowl, then sprinkle over the icing sugar, lemon juice and elderflower cordial. Stir and leave to macerate for 1 hr.STEP 2Whisk the double cream and vanilla extract, if using, to soft peaks using an electric whisk, then fold through the Greek yogurt and lemon zest. Gently fold three-quarters of the summer fruits through the cream mixture. Divide most of the remaining fruit between four dessert glasses, then spoon over the cream mixture and top with the rest of the fruit before serving. Will keep chilled overnight.
