Ingridients : 1 Lotus Stem
For Koftas
2 tablespoons Gram flour (besan)
1 teaspoon Red Chilli powder
1 teaspoon Coriander Powder (Dhania)
1/2 teaspoon Ginger Garlic Paste
1/2 teaspoon Coriander (Dhania) Leaves
Salt , as per taste
Oil , to fry
For gravy
2 Onions
1/2 inch Ginger
2 cloves Garlic
2 Cardamom (Elaichi) Pods/Seeds
4 cloves Cloves (Laung)
4 Whole Black Peppercorns
1 Cinnamon Stick (Dalchini)
3 cups Water
2 teaspoons Butter (Salted)
1 cup Fresh cream
For chilli oil
2 teaspoons Butter (Salted)
1/2 teaspoon Red Chilli powder
Instructions To begin making the Lotus Stem Koftas in Silky Gravy recipe, take 5-6 round slices of the lotus stem and grate rest of it completely.Mix all the ingredients of the Koftas and the grated lotus stem.Roll out 10 to12 balls out of it and fry well in oil till it turns golden brown.Keep it aside. Fry the slices of the lotus stem (for garnishing) and keep them aside.The next step is to prepare the gravy. Put water on boil.Once it is boiled, add all the ingredients of the gravy except butter.Let the ingredients boil well till the water is reduced to 1/3 rd of its quantity.Let the mixture cool down. Once it is cooled, grind well.Next, heat butter in a heavy bottomed pan and add cream.Once you add the cream, add the onion mixture into it and mix well.Fry the mixture well and simmer for about 10 minutes. Once done, add Kofta balls into it. Mix properly and let it cook for about a minute more. Next, we will make the chilli oil. Heat butter in a tadka pan and add red chilli powder in it. Let it cool down.Now take the gravy out in a bowl and garnish it with chilli oil, fried stem slices and mint leaves.Serve Lotus Stem Koftas in Silky Gravy along with Boondi Raita and Whole Wheat Laccha Paratha for a weekday meal.
