Kerala Style Jack Fruit Seeds Stir Fry Recipe

Jack Fruit Seeds Stir Fry is a delicious dish made using the seeds of the ripe jackfruit. These seeds are steamed, then chopped, seasoned and stir fried along with coconut. It is a very typically delicacy from Kerala. It is also made on the occasion of Onam or other South Indian festivals.

Ingridients : 3 cups Jackfruit Seeds (Kathal) , steamed

1 Onion , thinly sliced

3 to 4 Garlic , cloves, finely chopped

1 teaspoon Red Chilli powder

1/2 teaspoon Turmeric powder (Haldi)

1/2 teaspoon Coriander Powder (Dhania)

1/2 teaspoon Cumin powder (Jeera)

1/2 teaspoon Mustard seeds (Rai/ Kadugu)

1/4 cup Fresh coconut , grated

Salt , to taste

2 tablespoon Oil

Instructions To make begin making the Jackfruit Seeds Stir Fry Recipe, start by steaming the jackfruit seeds. See here how to steam vegetables. Once steamed remove the outer skin of the seeds.Slice the jackfruit seeds to the halves and keep aside in a bowl until required.Heat oil in a heavy-bottomed pan over medium heat. Add the mustard seeds and allow seeds to crackle.Add the onions, garlic and saute for a few minutes on medium heat until the onions are tender. Stir in the sliced steamed jackfruit seeds into the onion mixture.Add red chilli powder, turmeric powder, coriander powder, cumin powder, salt, sprinkle the little water, stir to combine and cover the pan with the lid.Cook the seeds over low heat for few minutes for seeds to absorb the flavor of the masala. Open the lid and check seeds for doneness. Turn off the heat. Add the grated coconut and stir to combine. Serve the Jackfruit Seeds Stir Fry Recipe along with Mixed Vegetable Sambar, Steamed Rice and Elai Vadam for your everyday meals.
