A light supper that’s so easy to make when you get home from work

2 thick slices granary bread200g pot of low-fat prawn cocktail¼ iceberg lettuce iceberg lettuce, shredded½ avocado, halved stoned and sliced
STEP 1Lightly toast the bread. Spread the bread with a little of the sauce from the prawn cocktail and top with the lettuce and avocado. Finally, top with the prawn cocktail.
