2 tbsp extra virgin olive oil1 tbsp honey1 tbsp sherry vinegar10g chives, finely chopped1 red chilli, finely chopped2 garlic cloves, 1 grated, 1 whole250g tomatoes, a mix of colours and sizes works well, cut in half2-3 slices of sourdough bread240g ball of mozzarella
STEP 1Whisk the olive oil with the honey, vinegar, chives, chilli and grated garlic in a medium bowl. Stir in the tomatoes and season well with salt and pepper. Set aside, covered at room temperature, for 1 hr.STEP 2Toast the sourdough, then rub with the whole garlic clove. Put the toast on serving plates, tear over the mozzarella, then spoon the dressed tomatoes on top.
