2 large or 4 small courgettes, topped and tailedjuice 1 lemon4 tbsp extra-virgin olive oil
STEP 1Using a vegetable swivel peeler or mandolin, slice the courgettes into long thin ribbons and place in a shallow serving dish. Whisk the lemon juice with the olive oil in a small bowl and season generously.STEP 2Drizzle over the courgette ribbons and leave to marinate for 15 mins before serving.
