Enjoy a fresh take on peas made with parsley and mint. Add a pinch of chilli flakes, if you like, and serve as a side dish

450g frozen peas25g unsalted butter, softened1 tbsp olive oil2 tbsp fresh parsley leaves, roughly chopped1 tbsp fresh mint leaves, roughly choppedpinch of chilli flakes (optional)lemon wedges, to serve
STEP 1Cook the peas in a pan of boiling water according to pack instructions. Drain well, then use a fork to roughly mash some of the peas. Keep most of them whole.STEP 2Return to the pan and add the butter, olive oil, herbs and chilli flakes, if using. Stir well to combine with a big pinch each of salt and pepper. Transfer to a serving bowl with the lemon wedges on the side for squeezing over.
