Makes 100ml (serves 4)
2 tbsp sake1 tbsp soy sauce1 tbsp Worcestershire sauce or vegan alternative1 tbsp oyster sauce (vegan if needed) or brown sauce1 tbsp mirin
STEP 1Put all the ingredients in an airtight jar or container, then mix well until combined – stir together using a spoon first, then put the lid on and shake until everything is fully incorporated. Will keep chilled for up to a month.
