You could add cucumber, salad cream or piccalilli to this sandwich – we like a few salad leaves and tomatoes for freshness

¼ red onion, thinly sliced1 tbsp salted butter, softened1 tbsp Dijon mustard2 tbsp mayonnaisea squeeze of honey4 slices seeded farmhouse bread 8 slices wafer thin honey roast ham40g Cornish Cruncher cheddar (optional)a handful of watercress, rocket or Iceberg lettuce1 tomato, thinly sliced
STEP 1Soak the sliced onion in some ice water for 5 mins, this helps tame some of its heat. Once soaked, remove from the water and pat dry with kitchen paper.STEP 2Spread one slice of the bread with butter. Mix the Dijon, mayonnaise and honey with a pinch of salt and pepper in a small bowl. Spread across the inside of both slices of bread.STEP 3Sprinkle the tomato slices with salt and pepper. Layer up the sandwich with the ham, cheese, watercress, the onion and tomato. Lay the remaining slice of bread on top and slice in half.
