Use up leftover meat from Sunday’s roast in this colourful sandwich

1 small baguette, cut lengthwayssprinkle olive oil and red wine vinegarpinch dried oreganohandful leftover lambfew slices red pepper and red or white onionshredded lettuce3 tbsp crumbled feta cheese
STEP 1Sprinkle the inside of the baguette with a little olive oil, vinegar, oregano and a little seasoning. Layer the lamb, salad veg and feta, then wrap tightly in cling film.
