1ā4 red onion2 ripe tomatoesa few coriander sprigs2 green jalapeƱos2 ripe avocados, halved1 lime, juicedtortilla chips, to serve
STEP 1Finely chop the red onion, tomatoes, coriander and jalapeƱos separately. Mix together the onion, tomatoes, coriander and a pinch of salt. Keep the jalapeƱos to one side.STEP 2Scoop all the avocado flesh into a bowl and crush with a fork, leaving it chunky ā it should not be purĆ©ed. Add the lime juice and onion mixture, combining gently.STEP 3Add jalapeƱos, to taste, and more sea salt if needed. Serve with the tortilla chips.
