small bunch of coriander, finely choppedsmall bunch of flat-leaf parsley, chopped2 garlic cloves, very finely chopped1 small sweet onion, finely diced1 green chilli (or red chilli), deseeded and finely chopped5 tbsp extra virgin olive oil2 tbsp red wine vinegar (or white, if you prefer)
STEP 1Put the chopped herbs, garlic, onion and chilli in a bowl.STEP 2Stir in the oil and vinegar along with a pinch of salt.
