Use leftovers from our garlic & parmesan breaded chicken with quick giardiniera to make this easy sandwich. It’s an ideal lunch for busy workdays

100g white cabbage, finely shredded50g leftover giardiniera (see recipe below)50g mayonnaise2 crusty rolls or 4 thick slices of bloomer1 leftover garlic & parmesan breaded chicken breast (see recipe below)
STEP 1Mix the cabbage with a splash of the leftover giardiniera pickling liquid and massage in using your hands, along with a pinch of salt and pepper. Set aside. Roughly chop the remaining giardiniera and stir through the mayonnaise, adding another splash of the leftover pickling liquid. Season to taste.STEP 2Spread some of the mayonnaise over the slices of the bread. Fill your sandwiches with the remaining chicken breast, cut into slices, with more mayo on top, then a handful of the cabbage.
