Make a quick and simple blueberry smoothie with yogurt, banana and apple juice for busy mornings. You can easily make it vegan by using coconut yogurt

175g blueberries1 small banana, sliced1 tbsp natural or Greek yogurt100ml apple juice, chilled3-4 mint leaves (optional), plus extra to garnish
STEP 1Put the blueberries, banana, yogurt, apple juice and mint, if using, in a blender and blitz until smooth. Add a splash of water if it seems too thick.STEP 2Pour the smoothie into a tall glass with a glass straw to serve. Garnish with a sprig of mint, if you like.
