2 tbsp vegetable oil2 crushed garlic cloves2cm piece freshly grated ginger1 red chilli, seeded and finely chopped450g minced pork350g jar black bean sauce115g rice noodle6 spring onions, shredded

STEP 1Heat the vegetable oil in a large pan then add the garlic cloves, grated ginger and chopped large red chilli. Cook for 1-2 minutes until softened. Add the minced pork and cook, stirring, for 4-5 minutes until browned. Stir in a jar of black bean sauce and cook for 3-4 minutes. Meanwhile, cook the rice noodles according to pack instructions. Drain and toss with the pork and shredded spring onions.
