Make use of earthy poitín – an Irish spirit – it works particularly well with the spiciness of American rye whiskey and the herbal chartreuse. A lovely pre-dinner tipple

20ml poitín20ml rye whiskey10ml yellow chartreuse15ml lime juice5ml sugar syrup, see tip1 egg white

STEP 1Shake all the ingredients together in a cocktail shaker, then double strain into a coupe glass.
