Perfectly ripe Galia melon, orange liqueur and Pimm’s pump this punch with summery flavour

1 Galia melonjuice 1 lemon100ml Pimm’s50ml orange liqueur (we used Cointreau)750ml white wine½ cucumber, slicedsmall bunch mint300ml sparkling water or sparkling wine ice
STEP 1Cut the melon in half and scoop out and discard the seeds. Using a melon baller cut the fruit into spheres and place in a large punch bowl. Add the lemon juice, Pimm’s, orange liqueur and white wine then chill in the fridge for 1-2 hrs.STEP 2To serve, add the cucumber pieces, mint sprigs and top with sparkling water and ice.
