Recreate this café breakfast favourite at home. We’ve used gruyère, but any good melting cheese will work. It’s perfect to use up a Christmas cheeseboard

2 large croissantschutney of your choice (optional)50g thinly sliced or shredded ham50g gruyère, thinly sliced or grated, plus extra grated cheese for the topswholegrain or Dijon mustard, for spreading

STEP 1Heat the oven to 200C/180C fan/gas 6. Split the croissants through the middle, being careful not to cut all the way through, and put on a baking sheet. Spread chutney over the bases, then top with the ham and cheese.STEP 2Close the croissants and spread a little mustard over the tops. Scatter over the grated cheese and some black pepper, if you like. Bake for 8-10 mins until the cheese has melted. Cool for 1-2 mins, then serve.
