A lightly floral Prosecco-based cocktail with crushed fresh fruit and refreshing cordial

12 gooseberries1 tbsp caster sugarjuice ½ lemon3 tbsp elderflower cordialchilled sparkling wine, for topping up (we used Prosecco)
STEP 1Tip gooseberries and sugar into a cocktail shaker or large jam jar with a lid. Using the end of a rolling pin, mush the gooseberries and sugar together. Add lemon juice, cordial and 4 ice cubes, pop on the lid and shake well. Strain into glasses and top up with white wine, then stir before serving.
