Makes 1 x 700ml bottle
200g cranberries, defrosted if frozen700ml vodka2tbsp juniper berries, bruised4 cardamom pods, bruised2 clementines, zest peeled into strips1 cinnamon stick2tbsp pomegranate molasses1 bay leaf3tbsp caster sugar1 star anise2 cloves
STEP 1If the cranberries are fresh, put in a bowl and burst with the end of a rolling pin. Put everything into a sterilised 1-litre sealable flip-top jar. Seal, shake so the sugar dissolves, and leave in a cool, dark place for 24 hrs.STEP 2Strain through a fine mesh sieve, then bottle. Will keep for several months in a cool, dark place. Serve with tonic, or a dash of prosecco.
