Make this falafel salad fun with a bento-style lunchbox. It’s great for toddlers and young children who prefer lunches with lots of individual elements. Use shop-bought falafel or make our Edamame falafel

250g pouch cooked grains or lentils (we used red & white quinoa)handful of baby spinach¼ cucumber, choppedhandful of cherry tomatoes, halved2 carrots, grated1 pomegranate, seeds only10 olives (optional)12 falafel4 tbsp hummusdrizzle of olive oil (optional)½ lemon, quartered

STEP 1Divide the grains between the lunchboxes. Top each one with the vegetables, falafel, a spoonful of hummus and a drizzle of oil, if using, or divide the ingredients between the compartments of a bento-style lunchbox. Put a lemon in each box for squeezing over just before eating.
