Need a sophisticated cocktail for entertaining? Cucumbers are used to garnish instead of olives in this refreshing twist on the classic martini

50ml sugar syrup (buy ready-made, or make your own – see tip, below)10 thin slices cucumber, plus 4 ribbons sliced with a vegetable peelerlarge bunch mint, stems removed1 tbsp dry vermouth150ml gin

STEP 1Chill two martini glasses. Put all the ingredients in a cocktail shaker or jug (except the cucumber ribbons), along with a handful of ice. Shake or mix well to combine, then strain the liquid into the glasses. Garnish with the cucumber ribbons, bunched up and threaded onto a cocktail stick.
