Quick, easy and on the table in less than 30 minutes – this zingy chicken stir-fry is a winning midweek meal

Serves 2

2 blocks egg noodles2 tsp sunflower oil2 cooked chicken breasts, shredded 3 carrots, finely sliced into rings2 tbsp clear honey1 tbsp soy sauce1 lime, juiced3 tbsp toasted sesame seedshandful of coriander leaves

STEP 1Boil the noodles according to pack instructions, then drain and toss with 1 tsp oil.STEP 2Heat the remaining oil in a wok and add the chicken and carrots. Stir-fry for a few minutes. Add the honey, soy and lime juice, bubble for 30 secs, then add the noodles and sesame seeds. Mix well, heat through and sprinkle with the coriander to serve.
