200g rolled oats100g bran flakes75g flaked almonds100g mixed seeds130g raisin & nut mix1½ tsp ground turmeric½ tsp ground ginger100ml coconut oil125ml maple syrup1 egg white
STEP 1Heat the oven to 140C/120C fan/gas 1 and line a large baking sheet with baking parchment. Combine the oats, bran flakes, almonds, mixed seeds, raisin & nut mix, turmeric and ginger in a large heatproof bowl using your hands.STEP 2Melt the coconut oil in a small pan over a low heat, then remove from the heat and stir in the maple syrup. Pour this over the granola and stir to combine. Whisk the egg white until foamy and slightly thickened, then pour this over the granola and stir again to combine.STEP 3Tip the granola onto the tray and press down gently using a spatula. Bake for 1 hr, turning the tray around halfway through. Leave to cool completely on the tray. Will keep in an airtight container for up to two weeks.
